Perusing the salad dressings at the store, anyone can see the choices have really expanded over time, just as many other food products have. What should one pick? Let's narrow the choices a little bit.
Look for dressings that have only cold-pressed oils in them (including extra virgin olive oil). Whoa! Now we're down to only a few options. But cold-pressed oils are truly the best-tasting with the greatest health benefit. They have been treated more gently than oils extracted by high heat, which damages the oil.


Such dressings are available, but the cost for passage into premium salad dressing land is high. That's why I make my own at home.

This is a dressing you don't have to feel guilty for actually using since the health benefits are so resoundingly great. Its versatility makes it well-suited for pasta salads, sprout salads and leafy salads alike.
One last thing: Save yourself a lot of aggravation, and please, please get a good garlic press. The annoying ones are very annoying, so if you cheap out and get one, you're going to be annoyed. And that's bad for you (and your housemates).
2 Tbsps. brown mustard
2 Tbsps. soy sauce or Bragg Liquid Aminos
1 Tbsp. honey
2 to 4 large cloves garlic, pressed
3/4 cup raw apple cider vinegar
1/4 cup water
1 tsp. dried basil (optional)
1/2 tsp. dried oregano (optional)
1/2 cup olive oil
Put all the ingredients except the olive oil in a 2-cup jar, adding the spices last, if using. Shake vigorously until well-combined. Add the olive oil and shake again.
